Elecampane, Inula helenium, is a robust herb and at 6-7' she holds an architectural presence in the garden. Elecampane Elixir is made from freshly dug side roots providing small discs that can be sucked as soothing lozenges. The discs are macerated in local honey and elecampane extract until they soften and are preserved. A best seller made from a plant grown here at the croft for the last 30 years.
